Sheet Pan Chicken and Vegetable Meal Prep Bowls

  • 1.5 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups mixed vegetables
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano

  • 2 cups cooked quinoa
  • Hummus or tzatziki sauce

  • Preheat your oven to 400°F (200°C).
  • Prepare the Chicken:
