Lemon Garlic Baked Salmon Recipe

This Lemon Garlic Baked Salmon recipe with Roasted Vegetables is delicious and nutrient-packed. It’s a perfect meal prep option for a quick, healthy lunch or dinner.

Lemon Garlic Baked Salmon Recipe Ingredients:

  • 4 salmon fillets
  • 3 tbsp olive oil
  • 4 cloves of garlic
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper
  • Fresh parsley
  • 2 cups broccoli
  • 2 cups cherry tomatoes
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme

Recipe Instructions:

  • Preheat your oven to 400°F.
  • Mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper in a bowl.
  • Place the salmon fillets in a baking dish and pour the marinade over. Ensure each fillet is well coated and marinated for 15 to 20 minutes.
  • Toss broccoli, cherry tomatoes, bell pepper, red onion with olive oil, salt, pepper, and dried thyme in a separate bowl.
  • Arrange the marinated salmon fillets and the seasoned vegetables on a baking sheet with parchment paper.
  • Bake for 15 to 20 minutes or until the salmon flakes easily with a fork.
  • Garnish the salmon with fresh parsley.
  • Divide the salmon and vegetables into meal-prep containers.
  • Store in the refrigerator for up to 3 days.
  • Reheat in the microwave or enjoy cold for a refreshing meal.
