Meal Prep Recipe | Quinoa and Vegetable Bowl

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Juice of 1 lemon
  • Fresh cilantro or parsley for garnish


  • Rinse the quinoa in cold water.
  • In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes, or until quinoa is cooked and water is absorbed. Fluff with a fork.
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and garlic and sauté until translucent.
  • Add bell peppers, zucchini, cherry tomatoes, and broccoli. Cook until the vegetables are tender yet still vibrant.
  • Season with salt, pepper, cumin powder, and paprika. Stir well to coat the vegetables evenly.
  • Add the cooked quinoa to the skillet with the vegetables.
  • Squeeze fresh lemon juice over the mixture and toss everything together until well combined.
  • Taste and adjust the seasoning if necessary.
  • Garnish with fresh cilantro or parsley.
  • Divide the quinoa and vegetable mixture into meal-prep containers.
  • Let it cool before sealing the containers and storing them in the refrigerator.
