Christmas Leftover Turkey and Cranberry Quesadillas

These Christmas Leftover Turkey and Cranberry Quesadillas are a quick and tasty way to repurpose holiday leftovers into a whole new meal. It’s a perfect blend of savory turkey, sweet cranberry, and comforting stuffing, all wrapped in a crispy tortilla.

Ingredients:

  • 2 cups leftover turkey, shredded
  • 1 cup leftover cranberry sauce
  • 1 cup leftover stuffing
  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 4 large flour tortillas
  • 2 tablespoons butter
  • Leftover gravy (for dipping, optional)
  • Chopped green onions or parsley for garnish

Instructions:

  • Prepare the Ingredients
  • Shred the leftover turkey into bite-sized pieces.
  • Reheat the stuffing so it’s easier to spread.
  • Warm the cranberry sauce slightly to make it more spreadable.
  • Shred the cheese if it is not already shredded.
  • Assemble the Quesadillas
  • Lay out a tortilla and spread a layer of stuffing evenly over one half.
  • Add a layer of shredded turkey on top of the stuffing.
  • Dollop cranberry sauce over the turkey.
  • Sprinkle a generous amount of shredded cheese over the turkey and cranberry layer.
  • Fold the tortilla in half, covering the filling.
  • Cook the Quesadillas
  • In a large skillet or griddle, melt 1 tablespoon of butter over medium heat.
  • Place the quesadilla in the skillet and cook until the bottom is golden brown and the cheese is melting (approximately 2-3 minutes).
  • Carefully flip the quesadilla to brown the other side.
  • Once both sides are golden brown and the cheese is melted, remove the quesadilla from the skillet.
  • Let it cool for a minute before slicing it into wedges.
